Why the Bloom Works
Greek yogurt creates a gentle blooming environment for Golden Sunset Shawarma seasoning. The dairy fat carries the spices while the natural acidity slowly tenderizes the chicken over time. Instead of rapidly opening the spices in hot oil, the seasoning gradually hydrates and softens inside the marinade, allowing the flavor to move deeper into the meat. During grilling, the yogurt lightly caramelizes against the heat, creating warmth, smoke, and savory depth without harshness.
Ingredients
2 pounds boneless skinless chicken breasts or thighs, cut into 1-inch pieces (907 g)
1/4 cup plain Greek yogurt (60 g)
3 tablespoons Golden Sunset Shawarma seasoning (24 g)
2 garlic cloves, minced (6 g)
1 tablespoon olive oil (15 ml)
1 teaspoon sea salt, or to taste (6 g)
Wooden skewers, soaked in water for 30 minutes
Method
In a large bowl, combine the Greek yogurt, Golden Sunset Shawarma seasoning, garlic, olive oil, and sea salt.
Add the chicken pieces and mix thoroughly until evenly coated.
Cover and refrigerate for at least 2 hours. For deeper flavor, marinate overnight.
Preheat a grill or grill pan to medium heat.
Thread the chicken onto the soaked skewers, leaving a small amount of space between pieces for even cooking.
Grill the skewers for 5 to 7 minutes per side, turning occasionally, until lightly charred and the chicken reaches an internal temperature of 165°F (74°C).
Allow the skewers to rest for 3 minutes before serving.

Chicken thighs produce a richer and juicier skewer, especially over open flame.
Medium heat works best for yogurt marinades. Excessive heat may scorch the dairy before the chicken fully cooks.
A small drizzle of olive oil before grilling helps encourage caramelization and prevents sticking.
For a brighter shawarma finish, lightly dust the skewers with a pinch of Golden Sunset Shawarma seasoning immediately after grilling.
This same marinade works beautifully for roasted vegetables, lamb, or oven-roasted chicken.
